Moroccan Cooking Class in Essaouira — Market, Tagine & Bread
Shop the market with your host, then cook a full tagine and fresh khobz bread from scratch in a real family kitchen — and eat everything you make, family-style.
This is not a demonstration in a hotel kitchen. It starts at the market inside Essaouira's medina, where your host does what they do every week: buys the vegetables, argues gently about the price, picks out the spices, and explains why the ras el hanout from one particular stall is worth the extra walk. You will see the fish market too, and if you want a fish tagine rather than chicken or vegetable, that is where we choose it.
Then we cook. The kitchen is a family kitchen, not a teaching studio — you will be at the same table where the family eats. You make a full tagine from the ground up, learning why the vegetables get stacked in a cone rather than stirred in, how much liquid actually goes in (far less than most recipes claim), and how the lid does the work. Alongside it you make khobz, the round Moroccan bread, from flour and yeast, and prove it while the tagine cooks.
Everyone gets their own tagine pot. That matters — in bigger classes you end up watching someone else cook while you chop an onion. Here you produce a complete dish you could go home and make again, and we send you the recipes afterwards.
We also make Moroccan salads to start — the small cooked and raw plates that come before the main dish — and finish with mint tea, poured properly from height, which your host will make you practise until it foams.
Then you eat. Around a shared table, with bread instead of cutlery, which is how it is actually done. The class runs about three and a half hours end to end, and most people do not need dinner afterwards. Vegetarian and vegan versions are straightforward, and we cook gluten-free with notice.

Questions about this activity
Can you cater for vegetarians and vegans?
Easily. Moroccan cooking is naturally vegetable-heavy and the vegetable tagine is one of the best things on the menu. Vegan works too — just tell us when you book so your host shops accordingly.
Do I need any cooking experience?
None. If you can chop an onion you will be fine, and if you cannot, you will be able to by the end. The class is genuinely hands-on but nothing about it is technically difficult.
Is it suitable for children?
Yes, and children usually love the bread. From about eight they can do most steps themselves; younger ones can help with kneading and shaping. Family rates available — message us.
What language is the class in?
English or French, whichever suits you. Your host also speaks Arabic and Darija. Tell us your preference when you book.
Can we do a fish tagine?
Yes — Essaouira is a fishing port and the fish is excellent. We choose it together at the market. Say so when you book so we plan the shopping around it.
